Roasted a mile away, on a drum from 1962.
We roast in small batches on a vintage Probat, cupping every lot before it lands in the hopper. Espresso is dialed twice daily; filter is brewed to order on a V60 or Kalita, whichever suits the coffee.

Our croissants proof for 36 hours. Loaves are naturally leavened with a starter we've been feeding since opening. Everything is baked in-house before the doors open — when it's gone, it's gone.
